DRY ANTHOTYROS

A hard cheese made of whey with 30% sheep’s and goat’s milk added. It is matured for at least 2 months before packaging.

In Crete it’s grated on pasta, as it keeps its consistency. It’s also great with meze and a glass of wine due to its mild salty flavour.
