At least 3 months of natural ripening and a 17-18% weight loss are the necessary pre-conditions for a P.D.O status (a product with a Protected Designation of Origin) for this hard cheese. This Graviera continues to mature until opened and is best consumed at room temperature in order to bring out its rich flavor.
